Ingredients
– 1kg of potatoes | – 3 eggs |
– 6 egg yolks | – 300g of breadcrumbs |
– salt | – 5cl of oil |
– 100g of butter | – 1 frying bath |
– 1 pinch of nutmeg | – pepper |
Preparation
1 – Peel and wash the potatoes
2- Cut them into pieces
3- Place them in a pan filled with cold salted water
4- Bring to a boil and cook for 20 minutes
5- Drain the potatoes and put them through a potato masher
6- Place the flesh in a saucepan and let it dry slightly, stirring with a wooden spatula
7- Add the butter in pieces
8- Remove from the heat and add the egg yolks
9- Season with salt, pepper and nutmeg
10- Heat the frying bath to 175°C
11- Prepare the breading beat the eggs with the oil
12- Season with salt and pepper
13- Put the breadcrumbs in a bowl
14- Make small croquettes in the frying bath in small quantities until they are golden brown
15- Drain, salt and serve hot
